Hang on, you're 20 and last we heard from you in October you were just thinking about getting a license.
So you'll either be on 25kW for 2 years, or you'll be getting the new A2 35kW license in January, again for 2 years.
And you're looking at supersports? For motorway use? ____________________ Biking is 1/20th as dangerous as horse riding.

What's wrong with that? I'm thinking of almost exactly the same thing.
Thinking about an old thundercat, but not sure how well they handle restriction. |
Probably a good choice as a soft sports bike rather than an out and out supersports. A CBR600F is worth looking into too. However, unless your restrictors are definitely going to fall out, I'd think long and hard about strangling 60% of the bike's power. A more sensible, half faired 600, fully faired SV, 400 Sports or a GS500F may be preferable.
If the washers are definitely going to fall out, go for it. Get anything you like and enjoy yourself, just don't go too silly. Making a slower first big bike go fast may make you a better rider once you get your full big boy's licence. ____________________ Triumph Daytona 675 track bike + girlfriend's Honda Hornet 600

Nothing's wrong with it, it just seems like putting the cart before the horse, especially when you don't have a horse yet.
Then there's Mike's running costs lecture. You'll get all the costs of a "Race Ready" bike, without the fun stuff at the top of the rev range. As previously noted, my GPZ500 makes the same torque and power as a Gixxer 600 up to 8K revs. An ER6-f makes more, up to 10K. Your Thundercat is also quite torquey, which would likely make it a better bet than the OP's bikes.
I'm just not sure what criteria you'd use to compare three restricted supersports 600s against each other, especially for motorway use. Isn't it going to come down to fit (sit on them), seat comfort (buy an Airhawk seat cushion) and which one you just like the best? It all seems very subjective. ____________________ Biking is 1/20th as dangerous as horse riding.
