I have very fond memories of sitting out in the front garden on a sunny day cutting and peeling pickling onions with my grandfather and then having hands that absolutely stank for days. Laughing.

I don't help make them anymore, but my grandparents still make us a big (~4 litre) jar every year or so which I absolutely love, especially with a nice thick fillet steak cooked medium-rare with home-cooked chips to cover in pickled onions and their vinegar, OM NOM NOM. Wub.

Love them, easy to make and taste great, no kitchen is complete without a homemade jar, the shop-bought ones taste disgusting. :p.

Cheers! Thumbs Up.

I've been making them for a few years and have tried different combinations of spices and vinegars. Made a batch this weekend with loads of chilli and black pepper, will post the verdict in about four weeks Laughing

Pro tip:

Shallots in Malt Vinegar from Sainsbury's.

I'm salivating now at the memory of them.

Hey Ocatoro.

What Keggy said, my Nan used to run a fish and chip shop so we would use shallots and Sarson's vinegar, the concentrated type so we could get it nice and strong.

But yeah, shallots and Sarson's malt vinegar, all you need.

Oh, you also need time, whilst they taste alright after a couple of weeks we have some that have been in the jar for something like a year and they taste awesome, so much better than ones left for 1-2 months, they are like a fine wine, they get much better with age. Thumbs Up.

Shallots and malt vinegar will do basic pickled onions, for something different you need to add spices.

Peel the shallots and soak overnight in a strong brine solution, this will ensure that they stay crunchy when pickled.
Place the vinegar, white or brown, in a saucepan and add spices of your choice, or use ready mixed pickling spices. Bring to boil and simmer for two minutes. Alternatively you can use Sarsons pickling vinegar which has spices already added.
Rinse the onions in cold water and place them in jars which have been sterilised in boiling water, add the vinegar and seal the tops. Very important that you rotate the jars to make sure there is no air trapped which makes the onions go bad. Adding a teaspoon of sugar before sealing the jars makes the onions a little less bitter.
Store the jars somewhere cool and dark for at least 4 weeks then eat.

You are joking! Shocked.

Finish your jar of pickled onions, put in cupboard, when wanting to make more:

1) Take it out and swill it out with cold water.
2) Buy shallots.
3) Peel shallots, put in bowl of cold water once peeled.
4) Once all are peeled, put in jar.
5) Fill with top with vinegar.
6) Put in cupboard, eat in two months.

Sterilization, spices, sugar, boiling the vinegar and all that jazz? Come off it. Laughing.

I find it hard to imagine it's difficult to improve on the existing flavour, they are just so good already, why fix what isn't broken? I'd be happy to try the ones you produce with that method, but I do love 'em the way I love 'em. Laughing!

Occam's Razor. Mr. Green.

Cheers! Thumbs Up.

I use small onions. I fill the jar with onions, spices, salt pepper then boil the vinegar and sugar so the sugar dissolves then pour it in hot and seal the jar.

The work is in peeling the onions

I used too, but then I realised Garners were actually bloody good.

If you're doing your own, as mentioned above some mustard seeds and/or chilli goes a long way, in addition to the usual coriander etc.

Yeah - Kradmelder is the only who's mentioned salt so far (uim), and I think it's a necessary ingredient. Peel the shallots then shower with a generous amount of salt and leave for 24 hours before jarring with vinegar.

I cheat!

I go to the cash & carry and buy a mega jar (about a gallon size) of their pickled onions. As sold they are absolute rubbish. However :-

a. Pour away all their awful acetic acid and rinse the onions
b. Fill up the jar with brine and leave for 3-5 days
c. Pour off the brine and add proper malt vinegar that has been simmered with pepper corms, chillis, a touch of corriander seed, a clove or 3 or whatever takes your fancy and has then been cooled

You may prefer to rebottle the onions in smaller, individual, jars. Remember the vapours from vinegar are corrosive so unless the jar lids are plastic you need to put a wax film layer below the lid

d. Leave for at least a year

I once found some jars of home-pickled onions that were 15 years old. Brown, streaked with silver, still firm and absolutely WONDERFUL

Is it safe to pickle garlic?

A couple of years ago I was given a big bag of really nice garlic and was going to put them in oil; however, there is something about garlic when oxygen is removed and toxins, potentially fatal ones, are produced.

Whilst I detest pickled eggs, we do make them as well as pickled onions.

However, it's a well known fact among the family that it's incredibly unwise to be within five hundred meters of my Father after a few pickled eggs, same with a few other people I know, they are just edible stink bombs. Sick.

You are correct.

Storing garlic in oil without freezing it can be very dangerous as due to being low-pH vegetables given the right conditions garlic can support the growth and production of the botulism toxin. These conditions include lack of oxygen and room temperature storage.

A good bit of reading on the subject can be read by clicking here.

Cheers! Thumbs Up.
