1. Indefinitely. However, the CBT that validates your provisionaL entitlement is only valid for 2 years.
2. You need to complete a CBT course before doing anything on road with a 125.

To ride a 125cc bike up to 11kW and 0.1kW/kg (pretty much any 4 stroke), you don't need to do anything more than a CBT. Just display L plates, don't use motorways, don't take a pillion.
You can get an A1 license using your own 125. You don't need any training (beyond CBT) to do so. Just book your motorcycle theory, module 1 and module 2 tests yourself. There's nothing hard in the tests, and several decent how to videos are available.
Your first vehicle test pass, including A1, gets the clock ticking on your 2 year "new driver" probationary period, so it's worth considering even though getting A1 doesn't let you ride a bigger bike.

3. Eh. As a bike, I'd rather gamble on a Sinnis than a Honda CBF or Duke 125. However, bear in mind that the Sinnis price doesn't include OTR or PDI charges, is a "parts" warranty and will very likely come with an "if serviced at a Sinnis dealer" condition on it, so you may end up spending not far off of CBF money to buy and own one, like for like.
That doesn't make a lot of financial sense as it'll lose value quicker than a CBF, even if it's a better bike.
If you buy Chinese branded and new, I'd suggest buying cheap. Lexmoto Street or Arrow, or Sinnis Max II or SP 125, forget about the warranty and self-service it.
The smart money goes on a used, good condition YBR or Varadero though. ____________________ Biking is 1/20th as dangerous as horse riding.

Sinnis are one of the better Chinese brands, although that's a bit like saying Exeter City's better than Accrington Stanley - they're both still shite
£1600 would buy you a mint used Jap' 125, £1000+ particularly at this time of year would get you a really good 125. With the Sinnis you're going to lose a lot in depreciation, whilst I kinda like what Sinnis are doing with their designs, I personally don't think the extra £££ for aesthetics is worth it.
tl;dr if I was buying a cheap Chinese bike, I'd buy a cheap Chinese bike
