I've got an old CB500 that I'm commuting on at the moment which has blown one of the exhaust manifold gaskets. Unfortunately, it has also sheared the bolt off on one side
I'm looking for a quick fix as I don't want to spend loads on an old bike that is falling apart anyway, so would instant gasket do the trick? It is seriously noisy at the moment...

No. It needs bolting on. Plumbers silicone would stand the heat but you only have one bolt bolding it on so it'll be moving about ad wil quickly fail again.
On that bike, there are two "spare" bits of casting at 90 degrees to the current studs where you could carefully drill and tap holes for new studs. ____________________ “Rule one: Always stick around for one more drink.
