That is going to be a problem. You do need to turn your head, both for the purposes of passing your tests, and also for not complicating your health problems by adding death to them. They're not called "lifesavers" for nothing.
You could try adding bigger / more mirrors, but you'll still likely end up with a blind spot.
Before someone suggests https://www.huntercreate.com/shop/riderscan I tried one and found that it wasn't great. I mean, it did what it promised to do, but practically speaking, the actual area of the mirror that covers your blindspots is tiny, and you can't rely on it. ____________________ Biking is 1/20th as dangerous as horse riding.

Ah Cardriveritis....
Afflicts many, of any age it seems...
It comes up in bike training all the while; and gets annoying 'nagging' students to remember to move thier fucking heads and do propper rear-observations, after so many years becoming ever more mirror dependant in a car, where they probably are just as loath to twist their kneck and look over their shoulder to check blind-spots or even to reverse!
So first heads up on the subject; as a 50-something, I assume you are a car driver... take from the bike lesson the 'refresher' on the importance of good rear obs, and even in a car turning your head!!!
Next; again, afflicts an awful lot of bike students; even in perfect physical health, they are just not accustomed to moving their head... and especially not with maybe a couple of bags of sugar's worth of added weight in in a crash hat on it.
That hat is also another damn good reason you need to be able to do decent rear-obs; crash-hat has a letter-box slot to look out of; the available field of view is an awful lot smaller than you get in a car, even a modern one with 'safety' sized pillars blocking so much these days! You don't have the same range of unobstructed peripheral vision, and you don't have so much 'glance space' you can see just by moving your eyes, you HAVE to turn your head so that letter-box view turns with it!
After a whole day in a hat, on the road, it WILL tell on the muscles.
And few riders spend that long in the saddle in a hat that often. As a more seasoned rider, still 'tells' on my neck, if I have spent the whole day on the road touring.
IF there is a real medical 'problem' underlying it, a) you need to get it sorted, b) should you even be driving a car, until it is? c) you shouldn't even be considering trying to ride a motorbike?
If not; if it IS just 'oooh that hurt'... well, yeah, it likely would. Take an Ibruprophen; have a relaxing bath, and get a good nights sleep; man-up and take deep breath to take the pain tomorrow on your next lesson, and console yourself you are excersising your neck muscles, and giving them some muscle memory so it WILL get easier with practice, AND when course is done, you probably wont ever spend so much time in a hat in the saddle at a stretch again.
There's no way around this; there's no way around turning your head to see what's going on around you on a motorbike. ____________________ My Webby'Tef's-tQ, loads of stuff about my bikes, my Land-Rovers, and the stuff I do with them!

If Tef were a doctor, all consultations would be an hour rather than ten minutes.
Not that the patient would get a word in though. ____________________ Biking is 1/20th as dangerous as horse riding.
