Edinburgh... Talk to me

[Jewlio Rides Again LLB]

Looking to spend a week in Edinburgh, very soon. Places to stay? Will probably get the train up there, so ideally needs to be in Edinburgh, rather than a few towns away and commute in. Don't want to pay hundreds per night, that's just silly. Recommendations based on previous experience would be nice, or just pointers where something nice could be found. Don't mind catering for ourselves either.

Looked at AirBnB last night actually. Mrs is a bit bothered about them just walking in while and rooting through our stuff while we aren't in etc.

Premier Inn on Princess Street. Is good. Easy walking distance from station (5 mins tops)
Is nice and central for everything you need in town.

I've only used AirBnB once, but would totally do it again.
I got a house which slept five people (two couples and a single) for the price it would have cost one couple in a B&B.
Just read the reviews. If they've got 30-odd saying "Nice owner. Very professional. Left us alone" or whatever, then what are the chances of them rooting through your stuff specifically.
They're businesses for the owners. You've more chance of a maid robbing your stuff instead.

The Beehive on Grassmarket has an awesome beer garden but it's not obvious, not even when you're in the pub, so a lot of people miss it.

Look up the Cambridge Bar for good beer, burgers and milkshakes. I make a point of having a lunch there if I'm in town. It's a bit tricky to find (near the west end of George Street) but worth rooting out.

Even many people who live in Edinburgh have never been down the Scotsman steps.

They go from the South West corner of North Bridge down to the back entrance of Waverly Station and are worth a look from both inside and out if you're passing.

They also stink of piss but you can't have everything.
