I've googled, can't find anything that doesn't blather endlessly about everything but the bit I want to know, so...
x4 AA batteries = 6 volts.
Rheostat, 1.8v to 15v capability.
x2 6v motors.
If I wire both motors to the rheostat will the motors get 6v each or only 3v each?

Depends on whether you wire them in series or parallel. In parallel, both motors will get the same power (assuming both motors are exactly the same*), in series the first will drain what it needs and the second will get what's left.

If I used a higher-voltage battery, would the rheostat act to govern the amount of voltage reaching the motors? I assumed that's how it worked anyway but it would be very handy if I could use a higher-voltage battery, namely a 7.4v Lipo.
One-cell 6v batteries are either way too small or way too big (the build is for two very small fans in a helmet to de-fog the lenses).
