Is it easy to change on a gpz 500? Do I just need the sensor or is the seals that also need replacing?

It is good engineering practice to replace the old seals.
It may be ok but if the seals leak then you have to do the work again.
May not leak immediately but it helps prevent phaphery.

Caveats : Unless you do not have/cannot source/can't afford new seals.

To what MCN says, I've got only to add that paper gaskets (unless we're talking the crankcase (gearbox), where spacing really does matter), may be fabricated for next to nothing (easy job). O rings and crush washers of all sorts are generic and you do not have to buy the motorcycle/model specific ones.
