Is it possible to replace pillion seats with bags/boxes?
I don't mean the tail bags which sit on the seat, but something to actually replace the seat completely?

It depends on what bike you’re talking about.
Honda do single seats on some of thier lower cc bikes in the Asian market.

Depends on the bike. Common on cruisers which have a big swoopy mudguard, you can replace the dual seat with a single seat and either have more of the pretty mudguard exposed, or have luggage there.

If your bike has a tray or underseat storage under the back seat, then you need something to cover it.

So it's entirely bike specific.

Hepco & Becker make luggage racks that click into the pillion mechanism.

I've got one for the RSV4. Highly recommended.
