I got the extended updates for a year on one which can't be forced onto 11 no matter what. Even with rufus and registry tweaks it backs out on final reboot it is some kind of custom rom on it I suspect.

When that runs out will try this.
I have an older laptop to test it on first.
About 6 years security updates by changing to windows LTSC

Though I'm struggling to imagine what awful things will actually happen without security updates.

Nothing at all. I was using XP until 2018. I only ever installed the service packs. I turned off auto updates etcetc.

Then I finally got onto Win 7 which after I installed sp1. Again turned everything else off. I don't even have a firewall or antivirus.

Your router will have a firewall

I used to hate patching servers as occasionally an update would brick one.

Nowadays we're forced to do them by the insurers.

The main vulnerability of any machine these days is the web browser, given home PCs generally live behind a firewall (in your router) anyway. The problem is when Google, Mozilla, et al stop updating their code for particular operating systems.

I’m giving Linux Mint a try, not that I care, they only act as home servers, so should be relatively safe.

There is something called tiny 11 very stripped down, also you can get an LTSC version of windows 11 when installed it doesn't even have one drive unless you download it.
