Wotcha.
Hmmm.
Does this only happen after a long run ?
If so, there's a good chance that it's 'running on' due to red hot carbon particles in the head acting as a 'glow plug' and igniting the fuel - hence the choke would stop it. My V W engine has a fuel cut off valve in the carb. to prevent this. { More common with two strokes, but the V W being air-cooled does tend to run hotter. }
Whip the head off and shift any carbon deposits that have built up - more commonly known as 'de-coke' the thing  ____________________ Cheers.

Either something wrong with the switch or running-on as said before.
If it stops when you turn it off normally, then it is unlikley to be the switch.
I would stop my bike by stalling it out (hold brake on then let the clutch out with the bike in gear) rather then flooding it with the choke, flooding the engine will not do anything for the amount of carbon in there if that is what is causing the problem.
Another way of definativley checking if it is an electrical problem or a carbon problem would be the next time it sits there running with the switch off, whip off the plug cap (using something insulated, not your fingers) if the engine stops, the problem is electrical, if it does not, it is definatley coked up. ____________________ “Rule one: Always stick around for one more drink.
