If you have claimed then technically the bike isn't yours to sell.

Personally do not touch it with a barge pole. I would say an older FZR1000 like that would be worth £1200 tops, and that one has a 916 style seat bodged on and after market paint. You can get an FZR1000 Exup for £1500 very easily which would be rather more powerful (and the old Genesis is a fair way short of the 130hp claimed).
Other thing is it claims to have a 6 speed gearbox. If it has then it is either a 750 or has had the engine torn down to fit a 750 gearbox (the 1000 had a 5 speed box).
Selling the R6 could make the claim difficult, and if the other driver is being a real pain then consider just spending £35 or so on taking them to the small claims court (them, not their insurance company). Might kick them into doing something.
If you did want to sell the R6 then consider how much Goose got for his when it was written off and could not go back on the road.
