How do you plan a tour of europe?

Ok, after posting this in outings and excursions yestarday and so far having no replys, I thought I'd post it here aswell.
Next year I want to travel through part of europe by bike, its something I've always wanted to do so im just gonna do it. But Ireally dont have a clue where, or how to start planning Its not goin to be the biggest of trips due to money, time etc. But countries I really want to go to are:
France
Spain
Monaco
Italy, bologna ducati museum
Has any one get any advice as to how to find the best places to visit, how to find the best roads to take (I'm not a big fan of motorways so dont want to spend the whole trip on them!)

Been planning one of these for a while (there is another thread I started a little while ago...), I started with a giant map of Europe, and asked people I know who live in those countries about great places to go, good roads etc etc...highlighted the lot with various coloured highlighters and started plotting routes between the 'great places'...

Of course, mix and match where you want to go and what you want to see, if you want to camp or go hostelling or 5 star hotels (sorry - no info on that - no such luck Wink

A couple of places in France that have come highly recommended are Riems and Chamonix (good roads - French alps and all that). If you find any more info or recommendations (I've got some more, but I'll have to pick up my map from my mate's house) let me know.
