Different methods can be used depending on the complexity of the image, and that of the paint work being modified.

With an example like this, I'd copy and paste the image twice into 2 seperate layers. Adjust the Hue/Saturation option from the top layer to the colour that you want, and then delete all the irrelevant material that you don't want changed (the background) to allow the original layer below to show through. Adjust the Levels manually until the top layer matches that of the bottom. Multiple layers may be needed depending on how complicated the original paint scheme is. (maybe a seperate layer for frame work, a seperate one for paint in this example). Matt black shouldn't be a problem - just adjust the brightness/contrast to take some of the shine out of the fairings - delete the bike's graphics if they're not to your tastes as well (make sure it's in a seperate layer, as mentioned above).

I'm not the best of tutors, and still learning the program, it's far easier if you just play around with the Image Properties options, cut and paste tools, etc - alot of the work is done by eye, or 'Artist's Licence'. Hence why it's quite difficult to explain without doing it myself and showing someone. Many techniques and tutorials can be found through a Google search, might find a better tutorial there.

Go to Digimods for lots of modding help. It's mainly for modding cars, but can be easily applied.
