If you don't finish it, you can always use it for cooking with.
Keeps for months and REALLY it doesn't actually "go poison"
Slosh it over a steak, or in some pasta sauce (PROPER pasta sauce, not that bottled/packet muck). ____________________ Not nearly as interesting in real life. |

I have a spay can of CO2 that you shoot into the open bottle to drive out all the oxygen. Then you just seal it tight with something appropriate. I use those little expanding rubber bungs.

This is supposed to allow you to keep opened bottles drinkable for weeks.
