Does anyone know if they're easy enough to get off?

You could have at hand an impact driver just in case the nuts are corroded and won't budge at first with a spanner. This is just in case to prevent rounding them off so that you can use them again!

As mentioned earlier using the appropriate grease prevents future corrosion on the threading, but having set of replacement exhaust gaskets would also help as to maintain an airtight seal when re-installing the exhaust system.

The exhausts are in spanking condition, I just don't like the cone style they have going on, want to see if I can get something a little different, but won't destroy the bike.

As above, if the nuts come off the studs or the studs come out of the head nicely then it is a piece of pi$$ to do. If you snap studs in the head and end struggling to remove the stumps before finally drilling the bolts out at the wrong angle and fooking up your engine it is a slightly different story.
