For those celebrating here in Cyprus, it will be the, ubiquitous, souvla.
For those not familiar with the term, that's large chunks of pork on a rotating spit over a BBQ.
To be honest that's all they ever have over here, Xmas, New Year, Easter, Birthdays, it's always the same.

Carp is very popular amongst the Poles and other Eastern Europeans.
We're having Beef, Gammon and Turkey.
The Gammon is currently soaking, then will be going in the slow cooker with cider, cloves and onion - this will cook for about 6 hours this evening.
In the early hours of the morning, the gammon will be coming out, the beef will be sealed in a hot pan and then that's going into the slow cooker (with onions, carrots, celery, garlic, red wine and some stock) and should cook for about 8 hours till lunchtime.
The Turkey will be going in the oven - it's only a tiddler so shouldn't take too long. Once that's done I'll probably glaze the gammon with honey and finish it off in the oven to crisp up the fat.
To accompany the feast - yorkshire puds, stuffing, roasties, roast parsnips, mashed carrot and swede, sprouts with lardons, red cabbage, broccoli, peas and loads of lovely gravy made from the beef juices.

We normally have different things, depending on how I'm feeling when shopping. A few years back we had various meats including reindeer. Don't remember fish being popular in Bulgaria. Mind you, I don't remember much about anything really.
Pork chops were definitely on the menu.

Us Swedes have a variety usually including ham, meatballs, potatoes, sausages, salmon and an abundance of vodka shots during dinner accompanied by chants
And we celebrate the 24th as Christmas Day, so I'm getting trashed tonight  |

We don't eat something special on Christmas at home(maybe Christmas cake for kids only). Christmas Eve is not for family but for young couples thing here(something is wrong). They go out for good Italian or French restaurants.
