I've had my ER6f since August last year and think its time to change.
The ER6 has been a great bike for a first big bike but I'm getting a bit bored now.

The dilemma I've got is I'm now undecided what to do.
I quite fancy the idea of a R1, ZXR10 etc but will get raped with the insurance.
So do I wait a year for more Riding experience/NCB then get a 1000cc or get rid now and go for a CBR 600 / R6 / Zxr6 / GSXR750?

I wouldn't personally jump from a er6 to a litre supersports.

gsxr/zxr/cbr 600, although the same capacity a your er6 will be completely different I think.

But plenty of people do jump up capacity ranks and have no issues. Like you say though, insurance will be the issue for you

Jumping to a 600 sports will be a bigger leap than you expect, especially on a reasonably modern one. Go and get a few test rides, you'll be pleasantly surprised.

First things first, try some insurance quotes on comparison sites.

I'd try the GSXR750 if i were you, a range of different years from the SRAD to the K9. It was cheaper than a 600 or 1000 for me!

EDIT:

But i'd definately recommend getting your 1year no claims before you change.

Have you considered getting a litre twin? I've had an RSVR and currently have a VTR1000 Firestorm, both awesome bikes of their own!

I'd go for the 600 sports bike so that you've got another 'step up' - learn to ride it properly and you'll probably be a bit disappointed by a litre bike however, as they really don't offer much more - just more of the same for a bit longer.

Personally when running quotes I find the 600s often cost more to insure than the litres. Still way too high for me to contemplate though.

Even a 90's 600 will be an extra 25-30bhp on top of your er6, or 40%, which is hardly a small amount extra.

If you like the way your bike produces its power though maybe another twin wouldn't be a bad idea, something like a Ducati 900SS is pretty cheap to buy and insure.

Just that supersports bikes tend to be very peaky so maybe a twin would be more what you're after? Worth considering.

Daytona 675? Plenty of torque throughout the rev range, still mad fast if you want it to be. Sounds brilliant (and different). Ideal step up from an ER6... if the riding position suits you.

How about a zx9r? You can pick them up at decent prices, low insurance and they are nice and gentle at low speeds but turn into a snorting monster when you get past 8k rpm!!
