IIRC the goalposts moved again and now you need the theory test before you do anything.
I say moved because in the past if you got a car licence before a certain year you didn't need the theory test and could just do the DAS course.
Also you cannot ride the SV before passing any test without being accompanied by an instructor (assuming DAS). The bike needs to be setup for whatever the test is. ____________________ ...and the whirlwind is in the thorn trees, it's hard for thee to kick against the pricks...

all of what on 125, the track days ?
what are the bike track days like, would i have a safe distance from other to comfortabley do knee down in the novice course
can i do wheelie
also do they need full license or they don't care ? i am thinking of doing track days in brands hatch or silverstone
the california superbike school does really interest me but expensive
i am happy to learn knee down on my own but don't want to drop it |

Brands Hatch require a full unrestricted licence.
Lydden Hill however do not.
Learning knee downs and wheelies both run the risk of crashing  |

stranger, you're at least 24, right? There's no short cut from old "A<=25kW" to new A, you need to be 24.
If so then you should be able to do "Accelerated Access" without doing another theory, but I have no idea if the DSA's system will cope since you're coming from an old "A<=25k" rather than a new "A2". You might have to just try it and see.
I do recall that the online booking demanded a theory test pass number up front, even before you got to select "Accelerated Access" - have you still got yours?
If not, or if the online booking spits its dummy then you might have to call them up and explain what you want. Use very. Short. Words.
I can't see any barrier to doing it. As long as your bike is 595cc+, 40kW+ and displaying L plates then it's suitable for an A test. You're perfectly legal to ride it at full power while on test using your provisional entitlement. I'd suggest that you also wear hi-vis. That's not a legal requirement but DSA Derek might not know that.
The only tricky bit is getting it there legally with a 25kW license. As you noted, the SV can be switched just with an ECU, and I believe the SFV650/Gladius too. Likewise, the ER6 is restricted just with a throttle stop, a little screw in the throttle body.
Alternatively, van, trailer or get a mate to pillion you in even if it's just from round the corner.
On insurance, Swinton don't (or didn't) ask to see your license and only ask (or asked) if you have a "provisional" or a "full" license. Under their choice of definition, you can only reasonably say that you've got a full license. There will be other insurers like that, I mention Swinton just because I've used them.
So yes, you can do it all yourself, and completely legally, although you may need to be a little flexible in what you tell people as they might not know that.
