They welded a sprocket to a shaft? How the hell did they align it anywhere near to acceptable mechanical tolerances?

Sprockets and output shafts are usually made form high-carbon steel so it can be heat-treated and drawn to a suitable hardness so the bits don't wear out. Welding either will upset this heat treatment and might well lead to a failiure of the weld, or even the shaft. I have seen probably a handful of welded-on sprockets on various machines and most have either a cracked weld or evidence of re-welding (obviously following a craked weld). It's very likely that they could be welded but using a specific procedure and using pre- or post-weld treatment - I don't know, I'm not a welder - but in my opinion the odds are on that it will crack at the weld sooner or later.

If the 'damage' was just a retaining clip groove or something it would be far better to put the sprocket loose onto the shaft and then put a blob of weld on the shaft to stop it slipping off. If the shaft spline is shot so that the sprocket can spin on the shaft, then welding is about your only option unless you want to strip or replace the engine.

I've put on nearly six thousand miles since I purchased it and added no damage and have complete ten year history so could easily get back £1200 I paid.

Should I sell and get another or will it be able to be grind off as the mechanic suggested?

Whenever anything is welded, things distort, no matter how good the weld/welder.
He has welded a shaft, which has now distorted is some manner. This will very likely now create a moment on the shaft which will kill the bearings on the shaft pretty quickly.

Good luck selling it in that state. The buyer probably wont see the bodge at first, but they will at some point. Depending on how long you've had the bike, it will be a fair bet they could take you to court and get the money back you scammed out of them.
