There are lots of 'street' boots out there to choose from, these do seem to offer very little protection over just wearing trainers.
But there is no law to say you can't do that if you want to.
I've got a pair of these:

Alpine Stars SMX2, Which are a pretty good compromise between comfort and protection, but I also have long boots.
They're a bit more than the RSTs though.

I personally aren't too keen on those as theres no shin and lower leg protection, plenty of people ride with similar and are fine though of course, it comes down to personal preference really.
As an alternative you might be interested in these. They're a little taller than the ones in your OP, but they're not as big and bulky as standard race boots. The lowerfoot area particularly feels like you're wearing normal shoes rather than space-boots as many of the full blown track boots often feel. It doesn't look a great difference in height and bulk in the pics but its noticable when you're wearing them.
