I've got a spare set of wheels that I want to get powdercoated, fit the spare tyres I have to them and stick them on the bike,

Anything I need to check / be aware of to ensure the wheels are ok before going ahead?

I'm going to be replacing all bearings as they have to be removed before powdercoating.

I'll need to swap sprocket from the one that's on as part of fitting but I'll get to that later.

Check for cracks/dents all over.

Look for corrosion on the bead seat.

Check disk/sprocket mounting holes for thread damage/cracks.

Check bearing seats for signs of a gorilla trying to change them/spun bearings.
