The short answer is you want a plastic moulded (sports) zipper with at least 10mm teeth (coil). You also want this to be the correct length and therefore you will need to measure your jacket but a minimum of 250mm for a 10mm plastic moulded coil would be my suggestion.
Motorcycle manufacturers might use shorter zips but they often use bespoke, ultra-heavy duty teeth which means shorter lengths. You are unlikely to have access to this type of zip (even I would struggle) so you need at least 200mm and 250mm would not be unusual. As an idea, Furygan uses a massive teeth size which cannot be bought in 'normal' sewing shops or in any online store that I have ever come across.
There are 3 types of zippers: plastic, metal and 'fashion.' The only one strong enough for motorcycle use is plastic. The bigger the teeth, the tougher they are so 10mm (or above) is the level you want because anything less is likely to break.
