You can sit on what you want, or tip toe on what you want, but you might want to tell us what license you have, you do have one?, before we start making recommendations.
CB600SA has an adjustable 3 seat height position and can be ridden on both A2 and A so that's one for both boxes. Not that I know a great deal about it.
https://cycle-ergo.com/ might save you some time because gets the hard bit out the way. Site reminds me it's the inside leg that makes the difference not your overall height so that might be helpful to know?
There is and there isn't heavy. Thing is small bikes are so easy to push around that after a while of riding and owning one it creates a false reality for when you then walk into a dealer and see proper bikes and it's like "oh ok, how do people handle these?" you just need to get over that hump and spend more time around full size bikes. There's plenty of choice on the market so make sure you settle for one your comfortable pushing around, stopping on cambers etc.
Easiest way is to go travelling to different dealers and sit on a few bikes to see what you can and can't handle at a standstill. I'm going to guess lightweight sports bike like 250's/300's, MT-03 and the like will be what you're after or the next step up. Try main dealers to get an idea then look on the private market for the same but way cheaper model.

Looking for a sports bike ish , also I can own any size bike thats not a issue ! And that could be the thing , it was at a dealership . |

If OP is struggling to reach the ground on a CBR125 and a CBR300R, an ER6 isn't going to be any better. The Ninja 300 is very fractionally lower than the CBR, the RC390 is a touch higher (because KTM).
If none of them suit, I'd suggest looking at lowering a bike slightly, which opens up pretty much any sports bike.
The weight, you'll get used to, and you'll have to if you want anything bigger than a 125. Modern budget sports bikes aren't as light as you'd hope. The KTM is the lightweight choice, but will need lowering the most.
Try out a few more before deciding, and see if you can take them for a ride. Once you're on the move, you're not going to be worrying about the seat height. ____________________ Biking is 1/20th as dangerous as horse riding.

I'd expect an R3 to be good for a sustained 80mph with decent earplugs. It'll go faster, but you won't necessarily want to hold it there for extended trips.
It'll be fun at lower speeds. What I found about 600cc+ IL4s (e.g. FZS600, CBR600F) is that by the time the laugh-tap comes on, I'm already going quicker than I want to. Some people love that, I don't.
Note, that's 4 cylinders. A big twin is a different proposition and rewards being ridden a big more lazily. It's not about capacity or even peak power, it's about where the power comes in, and how hard to have to ride to find it.
Any of the "300" bikes - CBR, Ninja, R3, RC390 - will be great fun (probably in that order) and can do anything. ____________________ Biking is 1/20th as dangerous as horse riding.

That depends 100% on how much control you have of your right wrist (On the throttle!). |
Gotta convince the parents on that , but I would assume a 600 would have more of a "Kick"? And would feel heavy ?

Alright so currently I will check out the R3 , CBR 300 - 600 (Maybe) Ninja , and try and find a KTM Duke or RC390 somewhere around , never seen one on the road actually !
