I drink a lot of coffee. These days I have it black. It's a recent change and got me to thinking about the times when I hear people that say "Make sure you put the milk in first or you'll burn the beans!" These are the type of people that drink Mellow Birds, or supermarket own brands, so I have to question if they have taste buds at all.
At any rate, I usually ignore them and put it in last as I always have when I made coffee. And I've never had a complaint.

So, you do believe that you "burn the [already roasted] beans" when you put the boiling water in before the milk?
Personally, I call bullshit. Particularly when it's freeze dried coffee.

It's total bullshit on instant. When using freshly ground beans the water temp in the vessel you're brewing in needs to be 96 degrees. Proper boiling water will scald the coffee, and potentially shatter your cafetiere if you've been a bit vigorous with a metal spoon in there in the past.

Exactly this, it's about the extraction process, which comes down to water volume, temp and grind.

However most instant coffee also explictly says on the label add hot, not boiling water. People are generally aware of how impatient most are and instantly pour a just boiled kettle straight onto the coffee, adding milk first just gives a buffer, but would essentially be the same as waiting for the water temp to drop to below boiling.

when I used to make coffee at work in the morning I used to put a bit of milk in first and stir it to dissolve the granuales

then when the water went in the coffee seemed to come out a lot nicer

so yes I put it in first it also gave me something to do whilst waiting for the kettle to boil Laughing

If you put the milk in first, how do you control the milk to tea/coffee ratio? You're screwed if you go overboard on the milk.

It's always smoother with milk first and if the water is really boiling, it gets slightly bitter.

stir it and it goes into a coffee paste the colour tells you how it will be when water added

Boiling water in coffee will make it taste bitter, so you can use the milk to cool it down or let the kettle sit for a bit.

With tea the water has to be chernobyl hot as it hit the tea bag.
anything else and your getting piss weak tea.

At work people use the wall mounted water boiler unit to fill up their kettles then boil it again. I suppose it makes sense because the wall mounted water boiler unit's set point isn't 100*C surely. Amuses me though.

Also I've only ever had instant coffee once, at some hip bike thing, it was a mistake on mine and their behalf as I'd asked for tea at the time. I nearly made a fuss but it would have fallen on literal deaf ears so I went for it. It was the worst drink I've ever had. I don't really drink coffee but that has turned me into a coffee snob fo' sho.

Since this thread just keeps bringing out the anecdotes in me, so I'll tell you about the exciting time I went for a christmas meal (in November). I was sat next to a couple, and the lass ordered a hot water and milk, ie a tea without the tea. The staff were flummoxed, brought her a hot water (which is a common enough request from East Asian's I hear) and a hot milk and just let her go mad. That was another first as she insisted I try it - it tastes like boiling watery milk fyi.

So,

Tea = teabag + scummy water out of the wall mounted boiler unit, let sit for the time it takes to do a morning poo at work (10mins+), scoop out bag with fingers (I did wash my hands honest), then a dollop of someone else's milk. Do not stir (no reason).

Coffee = black machine coffee that the gf makes. Or flat white Cool.

I don't put any water at all with instant coffee. Take a cup of milk, warm it for 2 minutes in the microwave and then add the coffee to it.

I drink all my beverages plain. And I find it odd putting sugar and/or milk in any of them.

What are the origins of putting milk in tea/coffee? In the land of Beer, only people with ulcers and those that don't actually like coffe, put milk in it. Thinking

Milk goes last for me usually. Sometimes if I'm bored waiting for the kettle to boil I'll put milk in first and mix it with the granules. As DRZ4Hunned said, you gotta get it right.

Tea needs to be brewed before cooling it down with milk.
Milk first = shitty, weak, limp-wristed, tasteless tea.

Putting the milk in before taking the tea bag out, I can dig - but only after a good two minutes brewing have elapsed.

(Unless you're talking about pouring tea from a teapot - in which case it makes no perceptible difference. Unless you have ultra fragile bone china cups that explode upon contact with hot water)
