You can, just be careful of altering cable routing as you don't want them catching or sticking and you don't want to stretch them too far.

Why do you want to change them?

Probably because the standard ones are gopping. They look like a child's trike.

i want to change them for a straighter handle bar because as kgm said they do resemble a kids trike, i just wanted to know if the grips and levers would go straight on another set.

Same internal diameter bars and you'd be fine. You might struggle to get the grips off without damaging them depending on how well they've been bonded.

You've been off a bike for 30 years and have no idea that most bikes use 7/8"-22mm bars.
My advice
Never mind the looks just get on and ride the fecker

Those bars with their high wide mirrors will give better rear visibility Then low narrow bars which will let you see your elbows
and sod all else.

Order new grips too. Getting the old ones off will be a pain.

Make sure you'll have clearance with the screen / tank.

You don't want the cables to be too short, so check from lock to lock. If the throttle cable is to short, turning the bars might rev the engine / brakes could be applied slightly.
If they end up longer, make sure they're not going to catch on anything.

You'll want to make sure any handlebar mounted reservoirs end up level. If you're dropping in height, you might need to remove some brake fluid too.
