Just get a set off ebay/breaker, gixxers are common as muck, and a few of the years are interchangeable.

500 quid is a joke.

Have a go yourself if you've got a manual along with the microfiche on https://www.alpha-sports.com/suzuki_parts.htm you will be OK as long as you are tidy and methodical, you should have 4 of most things Mr. Green split them into 4 lots and then do one carb at a time. You can buy new emulsion tubes which are supposedly oval?? (can be hard to see but the slightest out of true will affect running) they do go but the symptoms are usually rough/erratic running higher up the rev range not "running rich"
You can get carb oparts and rebuild kits from https://www.nrp-carbs.com/

It sounds more like the float needle seats are oval than the needle jets.

They appear to sell GSXR600 carb rebuild kits in the US but unfortunately a quick google reveals none in the UK.

Remember kids, bikes aren't like lego. You can't easily take a part from one bike and then fit it to another.

When I tried to fix my gixxer's carbs with one cracked jet holder, shagged o-rings and worn float valves it was cheaper to buy a complete 2nd hand carb bank on eBay (£70) than buy new parts. A jet holder was £115 from suzuki, sod that.
