Having made chicken soup for the first time last week to use up the remains of a chicken without a clue as to what to do, AND liking it regardless, i thought i should maybe ask everyone this time around and it could be even better (last time i just put LOADS of all my spices and herbs in with no idea as to what's what).

Just wanted to know if anyone had ideas as to what/how much of the following i should be using:
Salt
Pepper
Curry powder
Chilli sauce
Tobasco style sauce
Cumin
Coriander
Oregano
Mixed herbs
Basil
Tumjeric
Chilli powder
Cayenne

Or perhaps an alternative idea of how best to use the remains of my chicken?

Well depends what you like. I like simple flavours and like all the ingredients to show through.

So I just use a stock cube, salt, pepper and some herbs that compliment chicken. So I just use sage, rosemary and thyme.

Trick is, to add a pinch, stir and try it...add what you like according to your taste. You only learn through experimentation...either that or you can follow a recipe (but where's the fun in that?)

Can't say I would have put *all* those things in at once, but if you liked the flavour, then its your option.

Next time, just try putting in one or two, as said above, different smaller combinations, and see which ones you like better.

I'm very fond of chicken soup.
Onion, carrot, thyme, chicken carcase.
Sorted.

I hardly ever put salt in stuff when cooking.
I tend to put it in at the last minute, as and when needed.

We do chicken soup at work...
I like it, but there is something I dont like much in it.
We simmer the soup made with milk, with an onion covered with cloves.
Bag of chicken breast.
then a bayleaf.
Chicken IMO should be left simples. Even im a chilli fan, but wouldnt had any.
