Why do gay people talk gay?

You must all know what I mean, the camp high, soft voice.... Do they put it on to make people more aware? Or do they subconsciously grow into it as they feel more feminine?

Gay guy's don't want to feel more feminine as they are seeking to attract other guys, guys who like guys, not women. They're gay, not transsexual.
If you mean general campness, i've met a few camp people who are straight, and some gay people who are butch as fuck. Most of them can turn it off and on, i think the camp voice usually comes out in an effort to fit in better with they're girl friends.

What I don't understand is, if you're a gay man, you're attracted to men, right? My opinion of a man is someone who is masculine and strong. So why are gay men attracted to other gay men who act like women...?

I think they talk gay for the same reason some girls act all bimboish.

They want to be non-threatening and approachable to pull men, who might be put off approaching someone who might tell them to go away.

I have loads of gay/lesbian/bi mates and none match the stereotypical gay/lesbian/bi. None of my gay mates are camp and none of my lesbian mates are butch. The only stereotypical gays I know of are the ones on TV.

On a related note, when I was a nipper my sister was going out with a hairdresser named Ian..he had the campest voice and mannerisms I'd ever seen, and hasn't been bettered since, but he was straight, and I assume still is as I bumped into him in town a month or so ago and he had 4 kids in tow...
