What kind of fine can you get from taking a pillion without pillion cover on your insurance? My mate has never been on a bike so I thought for a one off I would take him out although I only have a 125 so it might struggle to even take off |

Bzzzt, no. It's not "pillion cover", it's cover for the use of carrying a pillion. There's an important difference.
Any RTA compliant indemnity will cover any 3rd party[*] regardless of whether you insured based on that risk or not. They will get a payout from your insurer if you bin it.
The risks to the policy holder are:
#1 Getting tugged by the fuzz and prosecuted for riding without insurance, and possibly having your bike seized. I'm not saying you'll be prosecuted or successfully convicted, but the RTA does talk about "the use" of the vehicle, and that's how policies are worded, for specific "uses". See also commuting and various types of business use, and agreed mileage limits.
#2 That if you agree with your insurer that you won't take a pillion and do it anyway, they may be able to sue you to recover their money. Again, very unlikely, but be aware of it.
arry will know the full story, but I'm fairly confident that covers the highlights.
Thing is, if you have a license (other than a provisional), and your certificate of insurance doesn't specifically exclude pillion cover, you're already good to go. No need to call a commission monkey, you'll likely just get lied to anyway. Go by what you already have in writing.
[*] Possible exception of a passenger in a vehicle that they know to be stolen. ____________________ Biking is 1/20th as dangerous as horse riding.
