Peppercorn sauce you can buy in a packet from tesco.

Steak, depends on the cut but this is how I do it.

- Leave steak out until it reaches room temp
- kitchen roll to pat steaks dry
- season with salt and pepper
- put a grill pan/frying pan on with an oil like canola oil. Olive oil should not be used.
- put oil in pan and leave to heat until its almost smoking
- throw steak in and leave on one side for about 1 min 45 seconds. Don't fiddle with it.
- flip over on the other side for the same amount of time
- sear the sides and fat once done
- put on plate and leave to stand for a minute then serve.

Should be just about perfect.

how would you be able to piss on someones bonfire if you no longer consume liquids? surely you'd have to make do with curling one out onto the fire instead, which most probably would not have much extinguishing effect whatsoever.

Throw money at it. Cheap steak is rubbish. Get a well-aged fillet steak from Waitrose or (if you're lucky enough to still have one) a quality traditional butchers. If you find yourself in Tescos then you *can* get reasonable steak by basically choosing the most expensive one you can find but it's hit-and-miss. You want something marbled with fat and a couple of inches thick. It should be dark in colour; burgundy not bright red or pink.

The key to steak is the purchase not the cooking, really. Your meal is already awesome or dreadful by the time you're at the checkout.

Get the steak to room temperature. Oil the steak not the pan. Get your pan as hot as the surface of the sun. Chuck steaks in. Once the steak is charred on the outide (all round, do the fat well) it should be crust on the outside and jelly in the middle.

Pepper sauce comes out of a packet. Serve with decent chips, a bit of mustard on the side and a decent French red like a Hermitages or a Chateauneuf du Pape.

Co-op have some decent aged sirloin on special at the moment at 2 for a fiver. Alright, they're a thin cut but as a former butcher with 10 yrs experience I can vouch that they're good quality. I had 2 last night.

Look around for some Maille Bearnaise sauce, in a proper jar. Much better than fucking pepper sauce on steak, again.
