So you know, if you just title your post "NEED HELP NOW!!!!!" then we'll know that it's a Piaggo without you having to spell it out.
Either your garage ballsed it up, or you gave them a bag of spanners to fit. What else do you expect to hear? Put it back the way it was, stop pissing money away on your wheeled hairdryer, and start saving up for a 125.

Scooter rage Mr Borg? C'mon, it's christmas!
Variator noise is odd. Take it back to the garage. Avoid running till thats sorted.
Fitting of clutch spring is also odd. You should really only need rollers, pipe & upjetting. Roller weights sound about right for a Zip but double check they're 19x15.5 and not 19x15, it's a common mistake that could cause rattli g. The other one is forgetting to pop the restrictor washer out of the new pipe but that would only limit the power output/top speed.
Check parts reciepts for roller specs first.  ____________________ Please be aware that the above post may be full of complete nonsense.

What is it doing when your trying to ride it? Revving high? Not revving at all? Cutting out?
The main jet should be around a 66 with an after market pipe and a de-restricted 17.5mm dellorto carb. ( or at least somewhere in the ballpark )

Reckon the jettings fine if it ran well with a sports pipe before fitting this one.
Variator noise is concerning however they will usually only pull 35-40mph if the washers left in & I've seen this happen multiple times on DIY fits with various pipes & its only as it stops at that speed that i'd even check it.
We never bothered fitting clutch springs on any of the power up kits we specced as the rollers alone seemed to perk it up. Clutch springs add an extra variable that makes a fast road setup an utter pain to set up for no real gains. ____________________ Please be aware that the above post may be full of complete nonsense.

The clutch springs do help on that setup. The Piaggio engines do like to rev.
Rollers are probably a bit heavy IMO, but it wouldnt stop it moving. I normally stick 4.5g rollers in with a de restricted 50cc standard cylinder and a Technigas Qtre or any other budget aftermarket pipe.

Been a while since I worked on my ped but if the garage isn't an option, whip off the variator cover and you should see this:

I personally have a feeling that either the clutch or variator assembly hasn't been done up correctly/tight enough. While you are there, take off the clutch assembly and have a look at the rollers, they shouldn't be sloshing about too much, or worse still, one could be completely out of place.
*question* I'd have thought if any part of the variator assembly wasn't done up well it would be very hard for the starter to engage?
The rattling noise is possibly one of the fins on the variator assembly that has snapped off on installation (if the garage is small and doesn't have an impact gun) however I have no idea due not knowing the garage. ____________________ Malaguti F12 Phantom-Dead, Suzuki AY50- Dead, NRG power DD LQ, CBR125.

Its not the exhaust thats the problem.....we know that.
