However they'd have to witness you doing something first. They could just pull you over and seize it.

I've been weary of this myself whilst having a spirited ride. I also pondered the thought of having to swallow the memory card if the situation arose.  |

I like to 'try' and think of a worst case scenario with things like that. It'd be easy to lose the memory card but you may not get a chance depending how you get pulled.
Also depends where the camera is, if it's poking 6 inches in the air off the top of your lid, it will look pretty suspect if you immediately whip your lid off and faff about in the casing to get the camera/card popped out.
They might not believe that it was off and having just received some phone calls of people mis-behaving on motorcycles, they reckon that my camera is worth looking at as I fit a description of one of the bikes mis-behaving... que me popping it in my mouth in front of them, chewing it up and swallowing it  |

Riiiight.
We don't have the same obsession with "unclean hands" evidence that the Septics do. I cannot imagine any copper hesitating for a second before taking a camera out of a car, off a bike, or off your helmet for that matter, reasonable suspicion or otherwise.
Cars can be searched on "reasonable suspicion" of containing any stolen or "prohibited" item, which is a long list.
Worse that will happen if they happen to rattle the wrong cage is Words Of Advice, probably With Biscuits.
PACE explicitly includes vehicles under the "premises " from which Plod may seize evidence. Indeed...

Ideally, you need some Pivothead wearable cameras, so it doesn't look as on top that you're recording.

Why not?
Are all CCTV systems "Home Office approved"? What about if you just filmed someone on your phone? Or recorded a phone call?
Or, to use an example from close to home, what if you were daft enough to put videos of yourself cocking around on YouTube and the feds smashed your back door in and took away all your computer gear (not "Home Office approved") and indeed your bike.
It's all evidence. The questions are whether the CPS would choose to use it, and the weight that a court would give it.
