I think it would be wise to stick to the manufacturer's recommendation for tyre sizes, but choose one that is suitable for the weather conditions - some are better in the dry, some are better in the wet, some are good all-round - and this is based on tread pattern and the compound used in the rubber, not necessarily the size.
I had a similar issue with the front tyre on my 125, but through trial and error found it ran much better with 2psi less than the recommended pressure.
This could be down to my pressure gauge being 2psi out, but 2psi less than it was reading before, made the bike feel much more stable. ____________________ Honda Varadero XL125(V8)

Try it with a little less air, and again with a little more until it feels right.
I pumped up the tyres on my car at the local Tesco on Sunday morning - their gauge showed 32psi. When I got home and checked with my digital gauge, they were reading 45psi.
Only 1/2 mile, but the steering felt very light until I let them down to 32psi. Just saying. ____________________ Honda Varadero XL125(V8)
