How ,long did you run the engine for?
IC engines produce water continuously, as a by product of combustion.
Hydrogen and Oxygen when combined can make Dihydrogen Oxide.

The twist of throttle with water spray was within the first minute of ignition. I left the bike on for nearly ten minutes and water gushed out like this a further two times on twist of the throttle/revving the engine.
The bike was presumably sat in their storage for under 30 days. ____________________ Kwak 636 (2005)

10 mins is not sufficient time to warm up an engine.
Either let it sit for 30mins or take it for a blast.
If it is a water wooled engine it can only hold a certain amount of water.
So when the water stops spraying out the exhaust, either the coolant has been used up or the engine has warmed up and you cannot see the vapour. The water has become steam. I'd probably undo the exhaust at the splitter and seperate one or more of the pipes to let any residual water out.
I also can't see that much water coming from the cooling system into the engine and it still be running so it's pretty much got to be water going up the exhaust.
I'd say as above, it was either on the back of a flatbed and got spray up in there or it got manky and someone's been at it with a pressure washer/hose.
If it's coolant, it'll taste sweet. Up to you if you decide you want to taste it. Wouldn't be stupid to check the coolant level anyway.

it starts and revs and idles. The video shows that.
ergo, not hydrolocked
it idles and revs well(? (sure sounds like it)) ergo not a faulty headgasket (not for THAT amount of spray...that will stop combustion 100%
so you got water inside your exhaust sitting about that somehow got inside from the only hole thats exposed at the back. Maybe someone was a knob, maybe it was "weather".

I have also seen a similar effect when someones "mate" at a rally spent the whole weekend pissing into their high level end can.
The best bit about that was the bikes owner had noticed and on the sunday morning he slowly and quietly unzipped said "mates" tent zip, reversed the bike into the opening, then fired it up and started bouncing it of the rev limiter.
