Got the wheel indoors and had it cleaned up.

I need to get to the brakes shoes and get that inspected.

Anyone knows what I have to undo to get to the shoes/pads?

Different break pads are secured in different ways. Your bike being a honda this can't be too difficult to work on.
When replacing with new pads you will need to release the bleed nipple with a spanner because you will be forcing the cylinders back in order for the new pads to fit the disk.
I found a workshop manual in French, not much good but the pictures may help.

P.S, if your gunna do this which it looks like you are, I would look into how to bleed your breaks properly after replacing the new pads.

Oops sorry, i din't mention it's for the rear drum brakes...

how are you able to preview your images.

I can't seem to preview. They have to be downloaded.

You will need adobe reader.
Download and install.
This is for windows, hope you ain't got a mac.

Then click on the link I posted on the above post, download as a free user, you will have to wait a few seconds.

I should imagine they will be fairly similar because there doesn't appear to be any other pic of other breaks, but then I didn't look that much.
They may well be more, they are situated towards the top of the PDF.
This is a PDF, zoom in a little and use the scroll down arrow to move down slowly.

Since the spindle has been taken out, I would have thought the brake assembly would simply lift clear of the wheel when pulled

I've looked at the manual but doesn't seem to make much sense.

This is the guide I followed that helped me take the wheel off: https://www.bikechatforums.com/viewtopic.php?t=174773

Also in that guide it says that you will need to pull at the brake caliper which in turn will remove it from the wheel. I've tried that and boy is it stiff as anything.

I guess i might have to put something under the protruding alloy like a metal spanner and push at it?
