Shouldn't there be a nut on the cable on either side of the engine bracket?

Make, model and year would help!

The lifter pin is usually retained at the bottom end, by a hook on the return spring that engages with a hole or protrusion inside the housing. Check that the spring is on correctly, and that the hook hasn't broken off.

Yes, there should.

You are missing 2 nuts.

You see the bit that the cable "sits in" the kinda metal looking sleeve, not the nipple but the actual cable.

That part of the cable is threaded for a reason. You have one nut either side of that, you then adjust the clutch cable by unscrewing the nuts, adjusting it and tightening back up.

The bit coming out of the engine should have something like this on it...

You should have a clip inside holding that part in. Initially I was looking at the clutch cable itself... Laughing
