I'd say do a compression check and look for air leaks past in the inlet manifolds.

could be that your carbs need cleaning/ re-tuning
these v4 hondas are very fussy when it comes to stuff like that
what colour were your plugs btw?

As it's a V4 getting the carbs to sit correctly in the rubbers is a total bastard. If they arnt in perfectly and sealed with the clamps you get air leaks and the bike starts to run on 2 or 3 cylinders and cutting out.

I once had an NC24. I have nothing nice to say about them.

There is a significant likelihood that the problem is electrical. The problem being that most of the NC24 electrical system is pretty weak. Reg/recs go, alternators can be quite tired by this age (epoxy insulation may have cracked off, or it could have just burnt out). CDIs are quite tough. Pickup and ignition coils are now past 20 years old, as is the wiring harness. HT leads run in a very confined, very hot space.

Has it started doing it recently, or have you not had the bike for long?

The carbs are total bastards to get seated on the rubbers, and if someone has made a ham fisted approach to getting them back on you may have a split carb rubber.

Mine did the same thing. Never really got it sorted, depsite a lot of time, effort, and money poured into the thing. Don't spend more than the value of the bike (about £200-300) on fixing it, something else will fail soon afterwards.
