Hi
Nothing stops the water / mercury going into the engine except the height of the pipe.
If you look at the intakes between the carbs and the engine you will probably find either a pipe with a rubber cap over it or a small philips head bolt covering a hole. These are where you connect the vacuum gauges.
I have heard that some Hondas have had some silly system where they have no proper connector but instead you puncture the intake with a hypodermic needle.
